Pouilly-Fumé is made from Sauvignon Blanc, a grape variety whose bunches are formed of small grapes, which are packed together and look like chickadee eggs. When ripe, these grapes are covered with a grey, smoke-coloured plum, which explains why the winegrowers of Pouilly speak of "blanc-fumé" among themselves to refer to the Sauvignon grape variety or the wines made from this grape variety.

The term "smoked" also refers to the aromas and the bouquet or "smell" recognizable among all (the famous flint-to-arms taste that emerges from the friction of two flints, which the terroirs of the Pouilly/Loire vineyard give it.
